When you dry a scoby you get an interesting material. Completely dry it becomes paperlike, when dried and treated with oil, it can be turned into a leather substitute. Coincidentally I discovered that letting them dry on paper creates interesting prints and inserting bits of scoby or pieces of stringy yeast in slide frames resulted in mysterious projections, some of them resembling abstract drawings. Alex, who had adopted the scoby that was located on the information desk in the entrance suggested that infusing kombucha with rose petals from the yard (the inner courtyard of the Saline) might be nice so I started a second fermentation, naming it Yard Kombucha. I also collected some rainwater there, to make a kombucha that would be even more yard-inspired.
